Green Bean Salad

Ingredients

  • tablespoon salt (for water)
  • 1 pound green beans, ends trimmed (leave whole or chop into 2 inch pieces)
  • 1 cup feta cheese crumbles
  • 1 cup cherry tomatoes, sliced in half
  • 2 tablespoon chopped red onon (any onion will work)
  • ½ cup silvered almonds (pan roasted)
  • 3 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 tablespoon fresh basil
  • 1 large clove garlic, minced
  • black pepper

Directions

  1. Boil large pot of water with salt. Add green beans and cook until tender but crisp. About 2 minutes.
  2. Drain and pat dry.
  3. Mix together all ingredients except almonds and green beans.
  4. Pour over green beans and mix
  5. Sprinkle the almonds on top.
  6. Chill 1 hour before serving.
