Chocolate Pastor Delight

Yields 1 cake

Ingredients

  • Cake:
    • 2 cups all-purpose flour
    • 2 cups sugar
    • 1 teaspoon salt
    • 1½ teaspoon baking soda
    • 1½ teaspoon baking powder
    • 2 stick butter
    • 1 cup water
    • ¼ cup cocoa powder
    • 2 eggs
    • ½ cup buttermilk
    • 1 teaspoon vanilla extract
  • Icing:
    • 1 pound powdered sugar
    • 1 teaspoon vanilla extract
    • 6 tablespoons milk
    • 1 stick butter
    • ¼ cup cocoa powder

Directions

  • Cake:
    1. Combine sugar, flour, salt, baking soda, and baking powder in a large mixing bowl. In small bowl combine butter, water, and cocoa. Using a microwave, bring to a boil. Pour over flour mixture. Mix at medium speed until completely mixed. Add buttermilk, eggs, and vanilla extract. Mix well.
    2. Pour into a greased and floured 9x13 sheet pan.
    3. Bake at 350F for 30 minutes or until a toothpick comes out clean-ish.
  • Icing: 4. Combine sugar and vanilla extract in a bowl. Combine butter, milk, and cocoa powder in a microwave-safe dish and bring to a boil. Add hot cocoa mixture to sugar and beat completely.
